杏鮑菇豆腐絲炒蛋絲
材料:
杏鮑菇4隻
硬豆腐一磚
雞蛋2隻
芝麻適量
蔥粒少許
處理:
1. 杏鮑菇,清水洗乾淨,擎乾水。
2. 杏鮑菇,打直切片,打直切細條,放碟上。
3. 豆腐,清水洗乾淨,廚紙索乾,切細條。
烹調:
1. 大火在鑊中煲滾清水一升。
2. 在鑊內加入鹽一茶匙。
3. 在鑊內加入杏鮑菇,出水2分鐘,撈起。
4. 豆腐,放鑊內,出水2分鐘,撈起,放杏鮑菇內。
5. 白鑊,中火,烘乾芝麻,放碟上。
6. 大火在鑊內燒熱油一茶匙。
7. 轉慢火。
8. 雞蛋,打勻,倒入鑊內,煎成餅狀,切絲。
9. 杏鮑菇及豆腐,擎乾水,放鑊內,慢火,加入調味料:
a. 豆瓣醬半茶匙
b. 素食蠔油一茶匙
c. 生抽半茶匙
d. 糖一茶匙
轉大火,炒勻。
10. 沿鑊邊加入油一茶匙,炒勻。
11. 加入芝麻(一半份量),炒勻。
12. 加入雞蛋絲,炒勻。
13. 加入蔥粒,炒勻。
14. 完成,上碟,灑上蔥粒及芝麻。
15. 可享用。

Ingredients:
King oyster mushrooms 4 Nos.
Hard tofu 1 cube
Eggs 2 Nos.
Sesame appropriate amount
Green onion cubes little
Preparation:
1. The mushrooms, rinse with tap water. Drain.
2. The mushrooms, slice it vertically. Shred it vertically. Put on a plate.
3. Tofu, rinse with tap water. Dry with kitchen towels. Thinly shred.
Steps:
1. Heat up 1L of water at high flame in wok.
2. Put 1 tsp of salt in the wok.
3. Put the mushrooms in the wok. Boil for 2 minutes, pick them up.
4. Tofu, put in the wok. Boil for 2 minutes. Pick it up. Put in the mushrooms.
5. Plain wok, medium flame, dry the sesame. Put on a plate.
6. Heat up 1 tsp of oil at high flame in wok.
7. Turn to low flame.
8. Eggs, get them whisked. Pour into the wok. Fry it into pancake shape. Get it shredded.
9. The mushrooms and tofu, get them drained. Put in the wok. Turn to low flame. Add seasoning:
a. Chili bean sauce 0.5 tsp
b. Vegetarian oyster sauce 1 tsp
c. Light soya sauce 0.5 tsp
d. Sugar 1 tsp
Turn to high flame, fry well.
10. Add in 1 tsp of oil alongside the wok, fry well.
11. Add in half of the sesame, fry well.
12. Add in the shredded eggs, fry well.
13. Add in the green onion cubes, fry well.
14. Complete. Put on plate. Put green onion cubes and sesame on top.
15. Serve.
