🟢材料:
排骨 - 400克
芋頭 - 150克
豆豉 - 5克
蒜頭 - 3瓣
薑 - 1小塊
蔥 - 1根
蠔油 - 1湯匙
澱粉 - 1湯匙
油 - 1湯匙
糖 - 1茶匙
鹽 - 1/4茶匙
胡椒粉 - 少許
🟢做法:
1️⃣ 排骨洗淨吸乾水,加入蒜蓉、薑蓉、豆豉、胡椒粉、蠔油、糖、鹽、澱粉和油拌勻,醃30分鐘。
2️⃣ 芋頭去皮洗淨切件,炸至微黃撈出。
3️⃣ 炸過的芋頭放碟底,排骨均勻鋪在芋頭上,不要重疊,水滾下鍋,大火蒸10分鐘。

Garlic - 3 cloves
Ginger - 1 small piece
Spring Onion - 1 stalk
Oyster Sauce - 1 tablespoon
Starch - 1 tablespoon
Oil - 1 tablespoon
Sugar - 1 teaspoon
Salt - 1/4 teaspoon
Pepper Powder - a pinch
🟢Cooking Directions:
1️⃣ Pat dry the pork ribs after washing, then marinate with minced garlic, minced ginger, fermented black beans, pepper powder, oyster sauce, sugar, salt, starch, and oil. Marinate for 30 minutes.
2️⃣ Peel and wash the taro, then cut into pieces. Fry until lightly golden and scoop out.
3️⃣ Place the fried taro at the bottom of a dish, then evenly arrange the marinated pork ribs on top without overlapping. Bring water to a boil in a steamer, then steam over high heat for 10 minutes.
