三色椒炒蟶子
材料:
急凍蟶子肉300克
三色椒適量
蒜頭3粒
辣椒仔1隻
豆豉10粒
處理:
1. 蟶子,清水解凍。
2. 蒜頭,去皮,切碎。
3. 辣椒仔,打直一開二,去籽,洗乾淨,切粒。
4. 豆豉,清水洗乾淨。
5. 三色椒,清水洗乾淨。
6. 蟶子已解凍,倒去水分,加入粗鹽一湯匙,乸2分鐘,去除雪味、腥味,及加入少許鹹味。
7. 三色椒,去籽,洗乾淨,切細塊。
8. 蟶子,清水沖洗乾淨,擎乾水。
烹調:
1. 大火在鑊內煲滾清水一升。
2. 在鑊內加入鹽一茶匙。
3. 加入蟶子,烚30秒,倒去水分,清水沖洗乾淨,擎乾水。
4. 大火在鑊內燒熱油一湯匙。
5. 加入蒜頭、豆豉及辣椒,爆香。
6. 加入蟶子,轉慢火。
7. 加入調味料:
a. 蠔油一茶匙
b. 糖一茶匙
炒勻。
8. 加入三色椒,炒勻。
9. 加入適量生粉芡,炒勻。
10. 完成,上碟,可享用。

Ingredients:
Frozen razor clam meat 300g
Tri-colour bell peppers appropriate amount
Garlics 3 Nos.
Chili 1 No.
Preserved beans 10 Nos.
Preparation:
1. The clams, defrost in tap water.
2. Garlics, get them peeled. Chop well.
3. Chili, divide it into 2 shares vertically. Remove seeds. Rinse with tap water. Dice in cubes.
4. Preserved beans, rinse with tap water.
5. The peppers, rinse with tap water.
6. The clam razors have been defrosted, pour away water. Add in 1 tbsp of cooking salt, season for 2 minutes, to remove unpleasant smells and add some salty tastes to them.
7. The peppers, remove seeds. Rinse with tap water. Cut in small pieces.
8. The clam razors, rinse thoroughly. Drain.
Steps:
1. Heat up 1L of water at high flame in wok.
2. Add in 1 tsp of salt in the wok.
3. Add in the razors, soak for 30 seconds. Pour away water. Rinse thoroughly. Drain.
4. Heat up 1 tbsp of oil at high flame in wok.
5. Add in garlics, preserved beans and chili, fry well.
6. Add in the clams, turn to low flame.
7. Add seasoning:
a. Oyster sauce 1 tsp
b. Sugar 1 tsp
Fry well.
8. Add in the peppers, fry well.
9. Add in appropriate amount of tapioca sauce, fry well.
10. Complete. Put on plate. Serve.
