炒四大天王
Sambal belacan stir-fry vegetables
材料:
1把 長豆(切段)
1把 羊角豆 (切段)
1條 茄子(切塊)
1把 臭豆
20克 蝦米(切碎)
叁巴醬糊材料:
辣椒乾(不辣):10條
蒜頭:4瓣
小蔥頭:8粒
馬來盬(Belacan)粉:1.5湯匙
👉 以上材料放入攪拌機打成醬糊,備用
調味料:
蠔油:1湯匙
糖:1/2湯匙
做法步驟:1. 將長豆切段、羊角豆切段,茄子切塊,臭豆清洗乾淨。
2. 熱鍋熱油,將長豆、羊角豆、茄子稍微過油至變軟,撈出備用。
3. 留底油,爆香蝦米,加入打好的叁巴辣椒醬糊,小火炒至醬糊顏色變深、香氣四溢。
4. 加入蠔油與糖,炒勻調味。
5. 倒入過油的蔬菜,和臭豆快速大火翻炒均勻即可。
✅ 小撇步:
* 辣椒乾先用熱水泡軟後才攪拌,口感更滑順。
* 若不吃太辣,可選不辣的乾辣椒或減量。
* 臭豆別炒太久,保留脆度會更好吃。
Sambal belacan stir-fry vegetables
Ingredients:
* A handful of long beans (cut into sections)
* A handful of okra (cut into sections)
* 1 eggplant (cut into chunks)
* A handful of petai (stink beans), rinsed
* 20g dried shrimp (chopped)
Sambal Paste Ingredients:
* 10 dried chilies (mild, soaked in hot water to soften)
* 4 cloves garlic
* 8 shallots
* 1.5 tablespoons Belacan powder (fermented shrimp paste)
👉 Blend all ingredients into a smooth paste and set aside.
Seasoning:
* 1 tablespoon oyster sauce
* 1/2 tablespoon sugar
Cooking Steps:
1. Prepare the vegetables: Cut long beans, okra, and eggplant. Rinse petai thoroughly and drain.
2. Heat oil in a wok. Lightly fry the long beans, okra, and eggplant until softened. Remove and set aside.
3. In the same wok, leave some oil. Sauté the chopped dried shrimp until fragrant.
4. Add the blended sambal paste and stir-fry on low heat until it turns darker and releases its aroma.
5. Add oyster sauce and sugar, mix well to season.
6. Return the pre-fried vegetables and petai to the wok. Stir-fry everything over high heat quickly and evenly. Serve hot!
✅ Tips for Success:
* Soak dried chilies in hot water before blending for a smoother sambal paste.
* Adjust chili quantity or use mild dried chilies if you prefer less heat.
* Do not overcook petai — keeping it slightly crunchy brings out the best flavor.
