梅酒🫒自己浸
Plum wine 🫒 soak yourself
材料:
青竹梅1斤(60~70%熟)
純米酒2.5升(酒度:29%)
冰糖300克(未開封,高質素)
程序:
1. 青竹梅,加入粗鹽醃10分鐘,去除草青味。
2. 清水浸青竹梅3小時,每一小時,換水一次。
3. 第二次,更換清水,再浸。
4. 浸了3小時,已換了3次水。
5. 檢查梅子是否完整,順便搣去椗。
6. 用廚紙索乾梅子的水分 。
7. 用風筒的熱風吹乾梅子,大約吹5分鐘,攤凍。
8. 預備容器盛載一半份量的米酒,玻璃樽內大約剩餘1.2升米酒。
9. 用牙籤在梅子上戳小孔,放入米酒玻璃樽內。
10. 從包裝袋內取出乾身的冰糖,放入玻璃樽的酒內。
11. 梅子,60~70%熟,浸6個月以上。
梅子,80~90%熟,浸3個月就可以了。
12. 完成。
自製梅酒🫒
Homemade umeshu🍾
Ingredients:
Green plums 1 catty (60~70% ripe)
Rice wine 2.5L(ALC: 29%)
Rock sugar 300g (brand new with good quality)
Steps:
1. Green plums, season with cooking salt for 10 minutes to remove unpleasant smells.
2. Soak the plums in tap water for 3 hours. Refresh the water for every hour.
3. The second round, refresh the water. Continue soaking.
4. Have been soaked for 3 hours, have been refreshed the water for 3 times.
5. Check the plums if they are in good shape. Remove the anchors at the same time.
6. Dry the plums with kitchen towel.
7. Blow the plums dry with a hair dryer for about 5 minutes. Wait for cooling down.
8. Prepare a glass container to keep half volume of rice wine. Retain rice wine 1.2L in the glass bottle.
9. Pinch on the plums with a toothpick, put into the bottle of rice wine.
10. Take out rock sugar from plastic package, put into the glass bottle.
11. Green plums, 60~70% ripe, soak for 6 months or more.
Green plums, 80~90% ripe, soak for 3 months is OK.
12. Complete
